Recipe of The Week: Pesto Crusted Salmon

I am making this one tonight. You can seriously make so many different versions of this. Try Pistachio Crusted or some other even just with lemon, salt, pepper and some cayenne pepper (if you like it hot.)


1 lb of boneless, skinless salmon fillets (4 oz pieces work good)

2 tblspn of pesto

1/2 cup Panko breadcrumbs



cooking spray (olive oil or coconut oil)


Preheat oven to 400 degrees

Stir Panko and pesto together to form a crumbly topping. season with salt and pepper.

Season the salmon with salt and pepper. Divide the mixture and place it evenly over the salmon pieces.

Spray pan or foil to keep the salmon from sticking. Bake for 15 minutes or until salmon is cooked through.
